Best way to find a font you don't know the name of is www.whatthefont.com
You need to crop a fairly clean sample of the font.
It would help if you posted a sample of what you are trying to do.

Looks pretty much straightforward to me.
- bring you graphics in PS, convert it to RGB
- type the same text (New Zealand...) in some contrasting color (dark yellow?) move it over the existing, change the font to Helvetica, if you don't have it, use any similar (Swiss, Arial) and play with the size/letter spacing until the text matches as close as it can.
- change the font color using the color picker to get the red color from the backgroung layer
- make a white rectangle on a separate layer to overlap the old text and place it between the new text layer and the background. On the right-hand side where the 'T' overlaps the shadow a bit use the clone tool
- change your new text to whatever you want.

Or if you're really nuts you could draw paths around each and every letter. Then you'd create the text by moving the paths around. You'd have the exact size but you won't have all of the letters of the alphabet.

ha, that's the craziest thing I've ever heard you say Tofu! Laughing For a font that simple, that is nuts. Razz Volkaris' method is pretty much what you do. I just did a very similar thing for a job, had to recreate a sports t-shirt and had to matchthe text all up, and make the borders, shadows and shading all the same. That font there should be a snap

Press F1 and in the search field type 'text color'.
Chances are you'll find answers to many of your questions there.

are we talking about photoshop or paintshop pro?

"paintshop"

Either way in photoshop. your text could appear white for a number of reasons.

You could have the type mask tool selected.
The opacity of the layer could be 0
The fill of the layer could be 0
The blending options could be set to make it look transparent
Your text is actually white in which case change the foreground colour to somthing other than white. or press Control and I to invert the colours
You have a white colour overlay set on type layers.
You have an inversion mask above your black text
You have written your text below a layer

White text with an outline you say.
On an image background...

Have you tryed clicking in the text options

Menu: Window > Character

And check your layer styles attached if any.w
Maybe applying a colour overlay could be a temporary solution

in any case print screen your layout and post it up in this thread so we can see what your layout is like... when open in photoshop

this may sound like a stupid question, but did you change your foreground color?

The text tool initially takes the foreground color as the color for text...
