I'm working on something in photoshop right now and I have a text line that looks like this

Logo's. Poster's. CD Layout's. And More....

My question is how can I put a (.) in between each word but have it centered between the top and bottom instead of having the (.) at the bottom between each word as it is right now in my example.

If using Arial on PC one can enter ALT+0183 . Also you can find it using Character Map

Couple of ways come to mind.
Some fonts have a "dot in the middle" character, so you may want to go to the system character map and see if you can find one. I see one in Garamond U+2022.
Also, you could highlight each individual dot and then go to Window -> Character and there is a vertical offset option on the left, where you can manually move the character up by typing in a pt size.

Edit: Or you can read the three posts above mine that basically said the exact same things. Laughing
