I mainly like ReyRey's because it has pictures that demonstrate the steps, and therefore a bit easier to follow and keep track of where you are. That, and like I had said earlier, its closer to the way I do things such as this.

If I created a closed path using only anchor points but realized I
should have added some handles so I can smooth out the corners. How
can I now go back and convert some of the anchor points into handles.

Look under the pen tool and you'll find options like convert pen tool & add anchor point tool.

Or control click and drag on the anchor point.
